How do I script a bicycle?

Like, a literal bicycle, to make the bike tilt, accelerate, decelerate and char. animations such as: - When bike stopped, played puts his foot down - Dancing (Cycling Related) and - Incline

Sorry if I'm asking too much but I'm really stumped...
