How can i stop the default idle and walking animations from playing?

Im trying to make a game to practice animations and coding but i cant figure out how to get the default animations from stopping, why its a problem is that sometimes the idle head turn animation will play and if another custom animation i made is playing then it cuts it off to play that, same with the running animations.
