How do you make a on touch counting GUI for 8 model but not in order?

So I'm working on a game similar to Slenderman, you collect 8 pages. Same concept here what I'm going for. But except, I'm a bit stuck. I want to make a counter for every time I collect the item, there will be 8 to be exact. So for every time I touch that type of collectible item, it counts on the GUI. I don't want the counting in exact order. I want the counter to count and item every time it is collected. Not like in order or anything. Because of the only way I myself know how to do something alike with it but that will kind of ruin the experience. Thank you for looking over this! The script is complicated enough to have them in order. How would I do it to where it counts on every item?
