I was wondering if it was possible to make like a server gui?

So I saw one of these games and they had like this thing that showed the servers and all the players pictures and even a join button it was just like the roblox website also if you know what im talking about it was auto duels

I am thinking they used HttpService right?

HTTP Service as well as game created places I would assume. Plus the more simple stuff like getting player pictures. So in sort, yes it's possible
