How do i remove the walk/jump gui on ios devices?

Is it possible? I need them gone because they will not be useful in my game.

Very simple: Just change the property ModalEnabled of UserInputService to true.

Very difficult to do, ROBLOX Scripting can't know if your on IOS. Sorry ):
