Custom Vehicle System? (For lack of a better title)

Many of the popular vehicle games don't use ROBLOX's default vehicle system, and instead make their own. I'm curious where I would start to make my own vehicle system. Apologies for the lack of description, I have no idea where to start for this, much less how to word it.
