So I'm very new to scripting ROBLOX Lua code and I need some help on how to attach blocks onto an avatar without doing it manually so I can make sort of a hitbox. Any help would be much appreciated!

Look into welding
Its recommended that you use welds to weld a part to a player's Torso or other parts of the player.
