I always use CFrame.Angles because it is the default thing I type. However, I didn't realize that Roblox used Euler Angles in CFrame.Angles. So what is the difference between both of the statements?

CFrame.fromEulerAnglesXYZ uses a coordinate system to find the angles. Angles found using CFrame.Angles are found using raw data.

Interesting... is this documented anywhere?

No, it's that all euler angles are found using coordinate points
In my experience and based on the wiki's definition there is no difference. As shown in the wiki here, the definitions are the same.
Honestly, I don't pay enough attention to know why they have two of the same thing. Maybe there is a subtle difference but in most contexts this likely wouldn't matter.

fromEuler is the difference. CFrame.fromEulerAngles - CFrame.Angles = fromEuler.

Lol
However to try answering I think it was just a change in naming convention.
