Is it possible to edit admin scripts?

You can edit a script whenever you want dude. What do you mean "possible".

Most likely no. Those usually have some private module script which you can’t access. The scripts you can use though are most likely just settings and stuff.

I don't recommend using admin scripts, because they can do anything without you noticing for example: prompting the player to buy a chair to boost their chair up on the front page.. I recommend only admin scripts that don't have private modules so that you can edit them and know what the script is doing. An admin script that doesn't use private modules is MakerModelLua.
