Is there a way to increase the speed/strength of a motor? I feel like maybe, but with a script. I've tried to mess with the surface input properties.

You can't change a default motor's speed. You'd have to use a cframe rotation. Roblox has a certain speed set that can not be changed.
I'm no expert, but go into the part that is attached to the motor and play with the TopParamB until you've got your speed.
EDIT: Realized this was 3yo, my bad
Make sure you have a VehicleSeat in Advanced Objects and then look in properties and you will see speed and everything.

The motor isn't for a car. It's for something that is spinning somewhat like a Ferris wheel. The platforms are too heavy for the motor, so it slows down when I jump onto it.
