Why doesn't the text property in a textbox automatically update when a player enters characters?

In the real game I type characters into the textbox and the text property doesn't update and instead stays blank. But in Roblox Studio when I type a sentence in the textbox the text property automatically updates and says that sentence I typed. I have experimental mode off.

Not really sure I understand your question... Maybe in-game you're checking StarterGui instead of your players GUI?

I am checking player gui. Like I need to get what the player typed in the textbox so I can send it to google sheets..

It works fine for me. Using this script, I am printing the Text property of the TextBox after every keystroke:

local textBox = script.Parent
textBox:GetPropertyChangedSignal("Text"):Connect(function()
	print(textBox.Text)
end)

Here is a video of it in action: https://youtu.be/fW9cmrNsJuQ

Do you have FilteringEnabled? It's possible that you're trying to access a player's PlayerGui with a server Script which won't work in a real game unless in Experimental Mode.

local script or global script?

LocalScript. Scripts don't work for GUI development.
