Make a team and put the color as the color you want the players name to be.

In the default chat colors are based on teams if they exist otherwise a random color is chosen. My advice is to create a black team and put everybody in it
If you wanted there to be no teams and chat colors to all be black, I would recommend making a custom chat personally.
