For example, in deathrun there is an image of a person running after another person with a sword, and it was animated. I know that you cannot import gifs (come on roblox add gif support) so how did they do it? Did they upload a ton of images and made them switch quickly using code? Did they use a sprite sheet?

I posted an answer to a very similar question here: https://scriptinghelpers.org/questions/37175/how-do-i-improve-the-performance-of-my-gif-gui-with-70-images-1-frame-per-004-second#39661
That method uses discrete images for each 'frame', but it is definitely possible to use a spritesheet.
