How would I add X,Y and Z forces?

I know how to change gravity but that only affects the Y axis. I want to affect all Axis' for example Y and Z. How would I go about doing this?

The way people changed gravity in the past was by adding BodyForces to different objects.

The collection of BodyMover objects will do this in different ways, each with their own Force, MaxTorque, or MaxForce properties to affect how they apply forces.

You're probably looking for either BodyForce, which applies a force to the part's center of gravity in world coordinates, or for BodyThrust, which applies a force to a predefined point on the part in local (object) coordinates.
