In studio, open up the Explorer tab. Then click StarterPlayer, and make sure the LoadCharacterAppearance checkbox is not set to true.
Then you can clone new clothes into the character, insert new hats, and change the body colors.

You can just clone and parent hats into a player and it will automatically be placed.
