If I were using UpdateAsync on a table like this.

and updated it with this
Kappa = {"Hi","Toucan",}
Would I have
Kappa = {"Hi","Owl", "Toucan",}
or the updated value?

Only the updated value. The trick is to use the callback function to do the merging, but how you merge things is an entirely different question as it begs the question of where you start putting stuff. As a result, I will be providing no code because this is specific to your circumstances.
