So I know data stores have limits to how much data they can have, but is it per key or per each data store?

It runs off of characters. The max limit to a datastore is 260000 characters, so be careful.

A data store can save (for all intents and purposes) an infinite number of keys (you can save a key for each player in Roblox). However, keys are limited in size, along with their value.
