Would it be possible to find a players health so I can use my health gui?

You can find a player's health from the Health property inside of the humanoid in the player's character. See this wiki article for more on the Health property.

I know, how would I get the players humanoid though?
You can use the Character property of the player and point to the Humanoid to do that.
