Can other players move an unanchored part that is local sided? What is the physics behind it?

No they cannot. Only the local player can.

Also keep in mind that the server doesn't see that part, so you cannot edit that part from the server; you only can edit it for all the players localy with remove events/functions

Just tested it and dropped an part in another player it bounced off the player which means because the server replicates because of the network ownership they can mess with it
It does not. That is just local.
