I don't want it to be a billboard GUI I want it to be as a text label. I tried watching YouTube tutorials but they all are making billboard GUIs.

How do I make a GUI that shows the players ROBLOX name? (Not a Billboard GUI)

Just create a ScreenGui, place it in StarterGui. Create a TextLabel and place it in the ScreenGui. Create a local script and place it inside the ScreenGui. Insert below code into it.
repeat wait() until game.Players.LocalPlayer.Character -- wait for player to spawn
script.Parent.TextLabel.Text = game.Players.LocalPlayer.Name -- set textlabel to players name
I also recommend looking at the various tutorials and looking through https://developer.roblox.com/ and read there. This is a very basic thing to script, and typically wont get an answer, but I figured I would try to help out. However you really do need to learn some more before trying to come back to this site, as its for helping people debug code, not create scripts/code for them.

The reason as to why all the YouTube tutorials you've been seeing are using Billboard GUIs is because that is the only way for the game to show a textlabel. It's kind of like saying that a textlabel will work without a GUI
